The Gordons' Kosher Gumbo

Step 1:
1 - 1 1/2 lb kosher salami -cubed: Brown Salami in pan w/powdered
Chipotle
1 lg kosher chicken: Fried until brown in same pan

Step 2:
The Rue:
Remove meat from pan. Add 6tb flour (gradually), stir until dark brown.

Step 3:
Add to rue & sauté:
Diced: 2 lg onion
1 bell pepper
1 red pepper
1c celery

Step 4:
Add to rue and sautéed veggies & cook 40 min.:
2 1/2 qt kosher chicken stock 3 cloves garlic
1/2 t thyme 3 bay leaves
1/8t powdered clove 1/8t allspice
1/2t cayenne 1t basil
Salt & pepper to taste Powered chipotle (optional)

Step 5:
Add meat & cook additional 40 min.

Step 6:
Add Handful chopped green onion & 1/4 - 1/2 t file per serving bowl.
